Game is naturally very low in fat. This makes it quite a challenge to develop a truly delicious pre-cooked sausage. Unfortunately, we still need pork bacon for that. We strive to use 100% game in our products. That’s why we’re currently working hard to develop an equally delicious sausage without pork bacon.

Ingredients: 49% wild boar meat, 33% pork, 8% water, 5% BBQ spices (starch (potato), white pepper, mace, parsley, nutmeg), dextose, hydrolyzed protein (rapeseed), emulsifiers E450, E452, onion powder, antioxidant E310), acid E325, salt, preservative E250, garlic granules, chives, stabilizers E450(i), E451(i), E452(i), glucose syrup, antioxidant E300, flavor enhancer: monosodium glutamate, paprika concentrate, acid E261, anti-caking agent E551.
Heat a pan on the stove and add a layer of oil or butter. Add the Wild Sausage when the butter or oil starts to shimmer. Be careful not to overcrowd the pan. The Wild Sausages should be able to spread out a bit so they cook evenly and don’t stick together. Grill the sausage in a grill pan or on the barbecue for 5 minutes. Don’t cook it too long, as this keeps it nice and juicy. This way, the delicious flavor will be fully expressed. You can serve the Wild Sausage with endive mash and a tablespoon of coarse mustard, but it’s also delicious on a hard white roll with lettuce, gherkins, and red cabbage salad, or on a soft white roll with sauerkraut, BBQ sauce, and a fine mustard sauce. In recent years, the Netherlands has hosted over 3 million grazing birds during the winter, including various geese species. They lead a wonderfully free life, primarily in fields, grasslands, and nature reserves. This is reflected in the meat; it has a rich flavor and is packed with healthy fats, proteins, B vitamins, and zinc.
Geese have large appetites and a limited digestive system. Some goose species are highly territorial and chase other bird species from their habitat. If local goose populations become too large, they pose a threat to biodiversity. They reduce the habitat of other animals and impact local vegetation. In addition, in some regions, geese pose a threat to public safety, agriculture, and forestry due to their growing numbers.
Interventions are then implemented to restore the balance in local nature. This is strictly regulated based on regional wildlife management plans. In the case of geese, various methods are used. These include reducing the number of eggs per nest, hunting, and sometimes trapping. Unfortunately, the resulting “harvest” is often wasted.
