Game tastes very different than you might be used to. You can taste that the animal has lived in the wild and has always moved freely. You can tell by the dark color and the full, distinct flavor of the meat.
Because game has such a distinctive flavor, we also offer a number of entry-level products in our basic range. One advantage of game’s naturally distinct flavor is that it often requires nothing more than a little salt and pepper. Game is lean meat, so you don’t need to cook it for long. Game is at its best when it’s still slightly pink in the center. Overcooking game dries it out and loses much of its flavor.
What does goose taste like?
With goose, you might be tempted to compare its flavor to other poultry like duck or chicken. The taste and texture are more comparable to redder meat. At first glance, goose also resembles steak. In fact, we recommend not overcooking the meat (just like with steak). The robust, gamey flavor of goose is best enjoyed when it’s still slightly pink on the inside.
What does duck taste like?
Wild duck has a unique flavor, especially compared to the neutral, mild taste of domestic duck. Wild duck is spicier and less fatty than domestic duck, which means it cooks faster. Although duck breast has the same shape as chicken breast, the texture, flavor, and color are different. Like goose, duck is red meat, which has a wonderfully full flavor if you keep the meat pink throughout while cooking. Overcooking duck breast can develop a liver-like flavor. Therefore, we recommend cooking wild duck medium rare.
What does deer taste like?
Venison is lean, has a unique, almost fruity or woody flavor, and is rich in iron, phosphorus, and vitamins. It is also easily digestible and has a milder yet rich flavor compared to other game. Because venison has a fine texture, you can eat most parts of the deer pink or even rare, and you only need to sear the meat a little on both sides. The fine texture, similar to beef, combined with the medium-gamey flavor makes venison a must-eat for everyone.
What does Wild Boar taste like?
When it comes to wild boar flavor, the rule is: “the older the animal, the more intense the flavor,” but generally speaking, wild boar meat is tender and delicate. Compared to pork, wild boar meat is lean, but it’s prepared (in the case of legs or chops) in the same way as pork.
